Happy Leap Day!

Style Saturday: Nail Polish

There are 2 new nail polish collections coming out in the next few months that I am very excited about.

China Glaze has come out with The Hunger Games inspired Capital Colours collection just in time for the movie to come out later in March. (Which I am very excited to see!) The collection includes 12 colors, one for from each of the districts surrounding the Capital, The collection includes glitter nail polishes to dark earth tones. They are available beginning March 1st, which is just next week!



The second is OPI's soft shade's collection: The New York City Ballet, which should be available this April. These six sheer shades will give your nails a subtle hint of color, which will be perfect for work, summer weddings, or just because. OPI nail polish always has creative names and the same holds true with these colors: you can top care to Danse?, My Pointe Exactly, You Callin' Me a Lyre, Don't Touch My Tutu!, Barre My Soul with the sparkling shade Pirouette My Whistle. .

What A Weekend!

 Tuesday after a 3 day weekend, is always hard. But today seemed especially hard to go back to work after the nice weekend I had. Some highlights from this weekend:

Tried a new place for dinner that opened recently close to our house called Bru. It was nice place, our dinner was very tasty. We started with the pretzel bread appetizer that came with a delicious cheese sauce to dip it in. For our entree, we shared a cheeseburger that Jordan claimed was the best cheeseburger he had ate in a long time. And I have to agree it was pretty tasty. And for dessert we had Doughnut Pops, fresh little doughnut holes with dipping sauces. Overall we enjoyed our dinner, and decided that we would definitely go back.

Had great friends over for dinner and game night. Always a good time with them!


Went on a hike in the Whiting Ranch Wilderness Park. Whiting Ranch is about 5-10 minutes from our house in Foothill Ranch and is a 4,300 acre park with miles trails, ridge lines, and gorgeous views. We hike this trail semi-frequently, but this was the first time we went all the way to the Vista Lookout Point. It was about a 5.5 mile hike round trip and went up to the elevation of 1550 feet. The views at the top were pretty, and you could see for miles, even in the cloudy condition.

Leanne's Favorite Pizza Dough

This pizza dough recipe is my favorite pizza dough that I have made this far. It works great with a number of different pizzas from Pepperoni to White to BBQ Chicken. The dough is not to soft, and not to sticky which makes it easy to work with. Plan ahead when making this pizza dough because it must rise in the fridge for at least 12 hours. That makes it perfect to put together Sunday afternoon, for dinner Monday night. This recipe makes enough for 2 pizzas.  

Ingredients 
1 package active dry yeast
1 cup warm water
1 cup ice cold water
1 tablespoon sugar
1 tablespoon salt
2 tablespoons olive oil 
About 5 1/4 to 5 1/2 cups bread flour

Directions
1. In a small bowl, with a fork, stir yeast into warm water. Let stand until yeast is dissolved, about 5 minutes. 


2. In another small bowl mix together cold water, olive oil, salt and sugar and stir until dissolved. 

3a.If using a stand mixer with a dough hook, add 5 1/4 cups of flour to the bowl.Stir the yeast mixture again to blend, then add to the flour mixture along with cold-water mixture. Beat with the dough hook on a low speed until the mixture is smooth and not sticky, 14-16 minutes. (Do not let the dough climb up above the dough hook, if it gets to high, stop the mixer and push the dough down.) If the dough remains sticky add 2 more tablespoons of flour and beat 2 minutes longer, continue to do the same until non-sticky and smooth. 







3b. To make pizza dough by hard, place 5 1/4 cups of the flour in a large bowl. Make a well in the center of the flour and stir in the yeast mixture along with the cold water mixture. Using a wooden spoon, mix the dough, incorporating as much of the flour as possible. Turn the dough out on a lightly floured work surface and knead until soft and elastic, 10-12 minutes. It will still be a little sticky, but should not stick to your hands. Add only a minimum amount of flour to the work surface to keep the dough from sticking. 

4. Scrape the dough onto a lightly floured surface and cut in half. With floured hands, pick up one portion of dough, pull opposite edges together toward center and pinch to seal. Repeat steps with second portion. Place each portion in a 1-gallon plastic bag. Squeeze out air and seal bag allowing enough room for the ball to double. Chill at least 12 hours, or up to 2 days. 


5. Allow pizza dough to come to room temperature before stretching to desired shape and thickness.

Cilantro Lime Chicken with Avocado Salsa

What a long week it has been! I know I was off on Tuesday for Valentine's Day, and only worked a half day today, but it sure felt like a long week! I am excited for the 3 day weekend this weekend. Thank you Presidents!

I have made this Cilantro Lime Chicken with Avocado Salsa a couple of times before, but forgot how good it is. It is light and refreshing and has lots of flavor.(Isn't everything with avocado good?) It is pretty quick and easy to make also.

Cilantro Lime Chicken with Avocado Salsa

Chicken Ingredients:
2 tablespoons minced fresh cilantro
2 1/2 tablespoons fresh lime juice
1 1/2 tablespoons olive oil
4 boneless skinless chicken breasts
1/4 teaspoon salt
Cooking Spray

Salsa Ingredients:
1 cup chopped plum tomato
1/4 cup finely chopped onion
2 teaspoons fresh lime juice
salt and pepper to taste
1 avocado peeled and chopped

Directions:
1. For the chicken, combine the first 3 ingredients in a large bowl and add the chicken. Let stand for 10 - 15 minutes. Remove the chicken from the marinade, and discard the marinade. Sprinkle the chicken evenly with 1/4 teaspoon salt. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan cook 6 minutes per side, or until finished

2. For the salsa combine the first 3 ingredients in a medium bowl and add salt and pepper to taste. Add avocado and stir gently.

3. Serve chicken over rice and top with salsa.

Valentine's Day!


Valentine's Day was a success! Jordan and I had a really nice day. I was glad I was able to take the day off of work, so we could enjoy the whole day together. We went out to lunch at one of our favorite places in Laguna, 230 Forest. The food and drinks are always delicious! Then we went to The Rooftop Bar, which overlooks the ocean, to enjoy a couple of drinks. They had a fun Valentine's Day Drink menu and we had "Be Mine Mojitos." I love drinks with fun names, they always taste better then regulars drinks! It was such a nice, the sun was shining and it was warm on the rooftop.

Valentine's Day Week Kick off!

To kick off Valentine's Day Week I made Cinnamon Roll Waffles this morning for a sweet morning treat!. I found the idea on Pinterest, and it is sooo easy and delicious. Jordan loves cinnamon rolls and loves waffles, so I thought this would be a perfect treat!

All you need is a waffle maker, Pillsbury Grands Cinnamon Rolls or cinnamon rolls of your liking), and some cooking spray.


When the waffle maker is preheated, spray generously with cooking spray and put the cinnamon rolls in. 


Cook low and spread the icing on when finished. 



After breakfast we went down to Laguna Beach for a hike. It is so nice to have such nice trails with stunning views of the ocean and hills less then 15 minutes away from us. We like to take advantage of them as much as possible. We ended up hiking about 6 miles and it was such a nice day for it.
